2024 Close Planted Grüner Veltliner

Estate grown Grüner Veltliner. Crushed to press, naturally fermented and matured in 50% large format oak, 50% stainless steel on full lees. Full malolactic fermentation. Bottled unfined and unfiltered in November 2024. A dreamy aromatic profile of nashi pear, lemon pith and grapefruit with hints of white pepper, almond blossom, sea spray, ozone, subtle fennel and mountain herbs, crushed stone and almond skin. Slinky and textural with daubs of cream, fine mineral drive and notes of citrus, stone, spice and whey as it slowly fades out.

2023 Clem Blanc

“Estate grown field blend of Pinot Gris, Pinot Blanc, Gewürztraminer, Chardonnay Musqué, Riesling and Grüner Veltliner. Up to 7 days of skin contact before pressing. Natural co-ferment and maturation in a Pozvek foudré for 9 months on full lees. 100% malolactic fermentation. Amber hue in the glass, this wine is complex and highly aromatic with scents of fresh apricot, musk and lychee.” – Sinapius

2023 Close Planted Chardonnay

“Grown exclusively from our dry grown, high density planted blocks. With between 7,700 – 9,615 vines per hectare, and 9 different Chardonnay clones, we harvested less than 1kg per vine. The grapes were handpicked at 11.2 – 11.5° baumè, then pressed to tank without enzymes. Lightly settled overnight, then transferred to barrel retaining most of the solids. ” - Sinapius

2024 Jean Morice Gamay Rosé

“100% Estate Grown Gamay. Crushed to press, no additions, wild ferment, old oak for 5 months. Bottled unfined and unfiltered with minimal sulfur added. This Rosé opens with an intensely perfumed nose, showing wild raspberry, rose water and subtle smoky, stemmy notes. On the pallet, crunchy bright red fruits of pomegranate, blood orange, raspberry, red currants and pink peppercorns with a mineral core giving an extra edge to the dry finish and crisp acidity….Perfect summertime drinking.” – Sinapius

2024 Esmè Rouge 

“Estate Grown Gamay sourced from dry grown, high density planted vineyard, planted in 2013 between 7,700 – 11,111 vines per hectare. Gently handpicked to ensure all bunches remain intact, the grapes underwent traditional whole cluster carbonic maceration without any addition of sulfur. The wine opens with an intensely perfumed nose, showing wild strawberry and redcurrants with hints of violet and wild fennel.” – Sinapius

“The 2022 Vaughn’s Jardin Gamay; 100% destemmed, whole berry natural ferment, pressed after 14 days on skins, matured in old French oak barriques, bottled unfined and unfiltered in February 2023. Medium red/purple in colour, some smoked, charcuterie notes mingled with red and blue fruits. Velvety, soft tannins layered with minerally acidity, a wine with great depth and texture, that I think still captures the lively fresh spirit of the Gamay grape.” – Sinapius

2023 Close Planted Pinot Noir 

“Handpicked from two north-east facing high density blocks, La Clairiére and The Enclave, planted to 7,700 vines per hectare. Volcanic soils, 12 different Pinot Noir clones, and super low yields (<0.5kg per vine – 30hl/ha). Like previous vintages, the decision was made to blend both blocks as the wine was more complete than the sum of its parts.” – Sinapius
