2019 Petit Chablis

100% Chardonnay from vines over Portlandien limestone, fruit pressed straight away. Fermentation in stainless steel to preserve the fruit lines and stoney minerality. Pale golden straw with brilliant green highlights. Dominant aromas and flavours of grapefruit and lime, generally with a cool green edge to the citrus fruit, alongside chalky minerality and a little white spice. A tangible minerality present and a nice line of acidity throughout to balance everything out. Pure fruited mineral style.

2020 Chablis

Most of the fruit is from 60-year-old vines over Kimmeridgien, a type of soil consisting of mostly limestone made up of ancient marine fossils. This wine sees no oak, allowing the grapes to be a fantastic expression of this unique terroir. A little green asparagus, green lime, sour cream lees edge with tones of minerality. Concentration and tension sit well in this wine where the natural acidity has a saline edge guiding the palate to delicate mineral finish.

2019 Chablis 1er Cru ‘Mont de Milieu’

Sparkling yellow green straw. Strong wet stone minerality with lime and lemon pith, fragrant grapefruit, white nectarine skin and a little grilled nut from the barrel component. Very fine palate. Hard to see the influence of the warmer vintage here, at least in the fruit profile which is very much citrus and apple still. Nice current of cool minerality which builds to a pithy stony dry finish with oyster shell flavours dominating. Super. Classic Michelet purity!
